Gouda cheese and Edam cheese are two famous cheese varieties made of cultured milk. 60% of our cheese production is Gouda. It comes in round and flat cheeses. Edam cheese can have a red coating. The difference between the cheeses is the fat percentage. Gouda has a percentage of 48% and Edam 40%. Edam cheese therefore is drier, lighter and tarter than Gouda. Holland is the largest exporter of cheese in the world.
